1. Prepare the pineapple by cutting off the stalk, then slicing off the hard skin. Cut around the tough middle part, where the stalk grows from, and discard. Slice the rest of the flesh into chunks.

2. Cut open the cardamom pods and remove the little 'beans', discard the tough outer skin.

3. Put the pineapple chunks, together with the rest of the ingredients into a blender. My absolute favourite is the Magimix Le Blender...you just have to press 'Smoothie' and the blender does the rest!

4. Test for strength and serve immediately, whilst still nice and frothy. Garnish with a sparkler...or raspberry, or a bit of mint or whatever you deem appropriate.

200ml of golden rum 


4 pods of cardamom 


2 tsp maple syrup 


8 cubes of ice
