1. Cut the watermelon into 3cm slices, then cut off the skin and remove any pips.
2. Cut into triangles, then spread on a large colourful serving platter.
3. Squeeze the juice of the limes onto the watermelon, then crumble over the feta and scatter the mint. Adorn with any edible flowers lurking in the garden.
Watermelon, Feta & Lime
SERVES:
Serves 4 as a side for a BBQ
About 750g of watermelon
2 limes
80g feta cheese
10g mint leaves
Note: Some people overcomplicate this salad by adding olives or indeed onions. I think the simple combination of lime and watermelon is too often overlooked so urge you to get involved.
